Ok, our summer travels have come to an end and I’m ready to post our first sandwich recipe. This one comes from Tyler’s Ultimate on Food Network. It’s called the Ultimate Steak Sandwich and it is a definite keeper. The cheese sauce sounds complex (what in the world is a bechamel?) but it’s actually very easy and the leftover sauce makes a great mac and cheese. We heated it up the next day and added it to some penne pasta, topped it with some more cheese and baked it.

Anyway, here’s the link to the recipe. Try it out yourselves or request it next time you’re visiting us - you won’t regret it!

Ultimate Steak Sandwich

The song for this post is from the Black Snake Moan soundtrack and features Samuel L. Jackson driving an RL Burnside version of a classic blues track to completely new places. It’s colorful - you’ve been warned.

I’m not going to try to excuse it. My blogging father responsibilities have been completely ignored. The good news is that I found a new hosting company for this little blog so everything should be a bit faster. I’m going to try to bring back the music player at the bottom of each post so watch for that. Today’s treat is a little Schwarzenegger-themed brutal thrash. I also took some time to change to a different theme - hope you like it!

Lindsey and I kicked around an idea tonight of making one kickass sandwich each week and posting the recipe and review for everyone to see. We may wait a few weeks until our summer travel calms down but I hope it works out. If you gotta eat something there is nothing quite like a good sandwich.

This weekend the Fox family went down to Richmond to visit Granddaddy and Grandma Thompson on Saturday and some old friends from high school on Sunday. One of those friends from high school is expecting a baby in a few months and we got together for a little baby party. All around a great weekend.

Once we got back and Jake got out of his car seat he was ready to play and his Mama was quick with the camera. We were able to get some good video of a laughing, happy boy and we thought we’d share it with the rest of the family. We hope everyone is doing well!

Hello everyone….and Happy New Year! Jason, Jake and I are home and back to our normal schedule after two weeks of non-stop celebrating of Christmas and birthdays and the New Year. Thank you to everyone who hosted us over the holidays and thank you to everyone who came to visit…we enjoyed spending time with one and all and celebrating here, there, and everywhere.

It was so nice to see our family in Kentucky for the first time since Jake’s birth! We’d been looking forward to the visit for a long time. Marmie and T met up with us at Mom and Daddy Bob’s and we were also able to celebrate Christmas early with Jake’s uncle Jason. Jake found a kindred spirit in Mom Brown who he “chatted” with and smiled at from the moment we arrived on the farm. To all our family in Kentucky - we love you and miss you already. GO CATS!! - congrats on the bowl win.

From Kentucky we drove straight on to Blacksburg to celebrate Christmas at Bob and Nita’s on Christmas Eve. Jake met even more family for the very first time!! We had a lovely dinner, looked through pictures of Christmas past, and exchanged gifts before everyone needed to be tucked in so Santa could visit. It was wonderful to see everyone and share in the holiday festivities!

From Bob and Nita’s we headed two houses down the street to the Fox homestead to be greeted by Jake’s Yaya, Grandpa, Great Grandparents, and Aunts Julie and Jill. We celebrated Christmas with the traditional aebelskeevers and a lovely Christmas dinner. Zeincheck was played and Jake was fought over (just a little) - we almost had to create a sign-up sheet and set a timer!!

The Thompson Christmas and birthday extravaganza was celebrated in NOVA this year. Thanks for coming up / down to share in our Christmas Story Christmas. We opened gifts prior to our Chinese delivery dinner - much to Grace’s relief…she asked when we were opening gifts as soon as she walked in the door!!

Thank you again to everyone for a wonderful holiday season. It was very special being able to spend time with you all and we are so happy we could share in celebrating Jake’s first Christmas. Be sure to check out all of our pictures by clicking on the Picture Gallery link at the top of the page.

Happy 2008 to all!!

It was great to see everyone and we’re so happy we could host this year. The kitchen talent in our family is astounding!

Things are going as smoothly as ever. Jake is a bit over 10lbs now and still eating well. He’s started giving us multiple awake/smiling times during the day which is great to see. I think these baby things are designed with time-release cuteness to keep your morale up. Next up: prompted noises!

It’s amazing to me, as a new dad, how much personality exists at this age. His face, while not completely under his control, is so full of expression. I will make any sound, facial expression, or complex hand/head movement to get even the smallest of smiles out of him. Every time he smiles I realize that no matter what I do or say or accomplish in my life I will never be better than I am right now. The type of love you’re capable of as a father is both inimitably precious and absolutely limitless.
